Pork Chop and Potato Casserole
6 pork chops, 1/2-inch thick 6 Yukon Gold potatoes, sliced 1 small onion, sliced, optional 1 1/2 teaspoon salt Pepper to taste 3 tablespoons butter, melted 3/4 cup evaporated milk 3/4 cup regular milk Place sliced potatoes in a greased 9x13-inch baking dish. Roll pork chops in flour & brown on both sides in skillet, in small amount of oil. Remove chops & sauté onion in pan. Top potatoes with butter, onions, pork chops, sprinkle with salt & pepper, pour milk over top. Bake at 350 degrees for 55 minutes or until potatoes & pork chops are tender. NOTE: May top with grated Colby Jack or your favorite cheese, just before removing from oven.
