Ham and Rice Casserole
1 1/4 cups cubed cooked ham 1 10 3/4-ounce can cream of mushroom soup 1 cup sour cream 1 1/2 cups grated Colby Jack or Cheddar cheese 1 2-ounce jar pimentos, drained 1 4-ounce can mushrooms, drained, optional 2 cups cooked rice Combine all ingredients except 1/2 cup cheese & pour into a greased 9x13-inch baking dish. Top with 1/2 cup cheese & bake at 350 degrees for 30 minutes. Yields: 6 servings.
