Almond Sausage Casserole
4 1/2 cups water 2 envelopes dehydrated chicken noodle soup 1 cup uncooked long grain rice 1 pound lean sausage 1 medium onion, chopped 1/2 cup green bell pepper, chopped 2/3 cup slivered almonds, optional In large saucepan bring water & soup to a boil. Add rice. Cover & cook on low 25 minutes or until all water is absorbed. Brown sausage & drain. Remove meat & add onion & green pepper, cook until tender. Add rice, sausage & vegetables together. Place in 2-quart greased casserole dish. Garnish with almonds. Bake at 350 degrees for 30 minutes. Has a tendency to be dry, may need to add more water.
